Masala pori / Puffed rice



Ingredients


Pori / puffed rice - 1 or 2 cup

Peanuts 2 tablespoon (optional)
Roasted chana dal  1 tablespoon(optional)
Curry leaves handful
Garlic 6-10 cloves 
Dry red chilli 2 or 3 broken into pieces
Turmeric powder 1/2 tablespoon
Chilli powder 1/2 tablespoon 
Asafoetida  pinch
Oil / Ghee 2 tablespoon 



Method

1. Heat oil / ghee in a kadai .
2. Add Peanuts and roasted chana dal , garlic and fry until it become light brown.
3. Add chilli and curry leaves.
4. Add chilli powder and turmeric powder and pinch of asafoetida.
5. Add a pori /puffed rice. Mix well to combine and saute for a minute to crispy

Note-

Saute on low flame only

Pori upma / Puffed rice upma



Ingredients 

Pori / Puffed rice
Mustard Seed
Cumin Seed
Chana Dal
Urad Dal
Cashew and peanuts (optional)
Asafoetida
Curry leaves
Onion finely chopped
Grated Ginger
Green Chilli finely chopped
Tomato finely chopped
Carrot finely chopped (optional)
Turmeric Powder
Coriander Leaves
Cooking Oil
Salt
Water


Method - 

1. Wash Pori / puffed rice in water for 1-2 times and drain it in a colander. Let it  sit for 10-15 minutes.

2. Add oil to a hot pan / kadai .

3. Add mustard seeds and cumin seeds. When seeds begin to sputter, and chana dal, urad dal, cashew , asafoetida and curry leaves. Cook until dals become light brown.

4. Add chopped onion, grated ginger and chopped green chillies. Saute until onion becomes translucent.

5. Add chopped tomatoes,chopped carrot, turmeric powder and salt and mix well.

6. Add pori  and mix well. Cook for 2-3 minutes.

7. Garnish with Coriander leaves. Turn off the flame. pori upma is ready.

Note -  Rinse the Pori 2 times, drain the water completely and then sprinkle little water. Let it sit for 10-15 / 15-20 minutes, so that it will become soft.

Aval puttu / poha puttu


Ingredients

Aval / Poha 1cup
Jaggery 1/2 cup
Cashew nuts (optional)
Coconut gratings 1/4cup
Cardamom powder a pinch (optional)
Ghee 1 tsp (optional)


Method
1. Dry fry the aval in a kadai till it turns light brown. Cool and grind it to a rava consistency. Do not make it a powder.
2. Wash rava consistency aval in water 1 time and drain it in a colander. Let it sit for 10-15 minutes.
3. Now the aval will be soft.
4. Melt the jaggery in a pan by adding 1/2 cup of water to it. Filter it and boil again till reaches one string consistency.
5. Add coconut gratings and cardamom powder and mix well in low flame and switch off the flame.
6. Add ghee and fried cashew nuts.(optional)
7. Add aval puttu and mix well.
8. Aval puttu is ready .

Aval / Poha Upma


Aval upma is easy to prepare and very delicious breakfast.

Ingredients 

Aval / Flattened Rice / Rice Flakes / Poha
Mustard Seed
Cumin Seed
Chana Dal
Urad Dal
Cashew
Asafoetida
Curry leaves
Onion finely chopped
Grated Ginger
Green Chilli finely chopped
Tomato finely chopped
Turmeric Powder
Coriander Leaves
Cooking Oil
Salt
Water


Method -

Note - If you are using thick red aval, rinse the aval 2-3 times, drain the water completely and then sprinkle little water. Let it sit for 15-20 minutes, so that it will become soft.
